Christmas is less than two weeks away so why not share my favorite recipe for sugar cookies with you? One of my favorite holiday traditions is making cookies and other goodies with my mom. She loves making sugary treats for the holidays and this year was no different. As a result, we gathered our ingredients and got to baking!
Now that you’ve seen a little behind-the-scenes baking, let me share my favorite sugar cookie (and icing) recipe with you:
~Roll-Out Sugar Cookies~
1 cup (2 sticks) unsalted butter
1 1/2 cups granulated sugar
2 3/4 cup all-purpose flour
1 egg
1 1/2 tsp Vanilla extract
1/2 tsp Almond extract
1 tsp baking powder
1 tsp salt
First, preheat oven to 400 degrees F. In a mixing bowl, beat butter with sugar until light and fluffy. Next, add in eggs and extracts. Then, mix flour, baking powder and salt; add to butter mixture one cup at a time, mixing after each addition. Do not chill dough. On a floured surface, roll mixture into a circle approximately 12 in. wide and 1/4 in. thick. Dip cookie cutter in flour before each use. Then, bake cookies in an ungreased cookie sheet 6-7 minutes or until sugar cookies are lightly browned. Makes about 3 dozen sugar cookies.
~Icing~
1/4 cup Meringue powder
1/2 cup water
4 cups confectioner’s sugar
First, add meringue power to water. Then, beat until mixture appears foamy. Once this is accomplished, add confectioner’s sugar to the mixture one cup at a time. Stir the mixture after each addition. If needed, add water to the mixture until it reach a rich consistency. If the mixture is not thick, then the icing will not harden. Finally, add icing to the sugar cookies and let them dry in the open air.
